No Bake Strawberry Pie

Summer time means fruit pie time! At least in my book. If there is one thing I love more than frozen yogurt and summer smoothies – strawberry pie. And what could be better than finding a way of making it without using your oven at all. This recipe is certrainly not a secret but it has been in my family for years, and it’s super tasty I can tell you that. So I thought why not share it with all of you guys, so you’ll have something to present at sunday brunch. So here goes:

For this recipe you’ll need

400 gr of shortbread cookies
100 gr of butter
500 ml of whole milk
2 egg yolks
1 vanilla bean
5 tsp of corn starch
1 tbsp of sugar
2 punnets of fresh strawberries
and a 9 inch round tart shell with a removable base

I know this seems like a lot of ingredients for an easy and quick strawberry pie but trust me it’s easy and totally worth it. First you want to cursh all your shortbread cookies and melt your butter. Then you want to mix the two together and pack them into your tart shell. Make sure you pack them in there very tighly, that way they’ll stick togehter once you take the pie out of the shell. Once that’s done put your base in the fridge and let it cool. Next on to the vanilla custart: For this you want to take 400 ml of milk, mix it with the mark of the vanilla bean and bring the mixture to a boil. Whilst your milk is heating up you want to take the remaining 100 ml of milk and mix it with your egg yolks and your corn starch. Once your milk is boiling – mix in your milk and egg mixture and let it boil for about two minutes. After that you want to let it cool for a few hours.

Now it’s time to put all of the parts together. Take your base out of the fridge and spread the vanilla custart on to the base. Now it’s very important your custart is cool before you put it on the base otherwise the custart will make the butter melt and ruin your base. After that you want to take all your washed strawberries and place them on the custart. And you are done! This pie is served best with whipped cream but make sure you keep the pie in the fridge until you are getting ready to serve it. There you have it guys – my no bake strawberry pie.
